New Soup: Bean and Kale

Since the soup and chili season is officially here, I thought I would post this soup that I want to try:
INGREDIENTS:

4 cups dried white kidney beans (soaked overnight) or red kidney beans, should not make a difference.
2-3 cups vegetable broth (or 4 if you don’t want to use water)
2 cups water
1 Cup chopped celery
1 bunch fresh kale, coarsely chopped (with or without the stem. I kept the stem.)
1 medium onion, coarsely chopped
2-3 garlic cloves, pressed (or diced)
1/2 red bell pepper, chopped
1 tsp paprika
1 tsp red pepper flakes
sea salt & black pepper to taste
Saute onion in a little bit of veggie broth until transparent.
Add broth, water, beans and bring to a boil.  Cover and simmer for 20-30 minutes or until beans start to get tender.
Add kale, red pepper, garlic and all seasonings for the remaining 10-15 minutes and simmer on medium.
Soup is done when veggies & beans reach desired tenderness.

Notes to the Therapist: Sheldon

Current symptoms now physically:

When under the exposure these are the symptoms
loss of balance, the ears fill up with liquid
loss of spacial judgements, knocking things over easily, missing turns in car, running over curbs
    typing becomes difficult and slow
itchy skin all over
post nasal drip
blurry eyes
gas
constipation
mental stuff starts happening
loss of concentration
short term memory loss
irritation
anxiety,
depression
Once I cover my nose and mouth with a clean cloth and breathe for about 25 minutes, not talking, not eating, all symptoms are lessened. Even the depression.
Now I have already put an air purifier and de-humidifier in my bedroom, and that has helped greatly for sleep. I used to wake up in severe depression and could not figure out why.
I have started on the generic OTC antihistamines for Zyrtec and Allerga.  Went to get a shot of steroid on last Tuesday, and it helped for about two days. They said it would last for one week Now I am on 5 mg of Prednisone. It barely helps. Right now I have to be outside for the job. So I take a lot of breathing breaks. I am taking the OTC Allerga and Prednisone together. It barely helps, even in the house (out of the bedroom with the de-humidifer and purifier).
My questions
I believe it is mold.  The symptoms are severe in rainy weather.  Even in overcast weather. What other type of thing could it be?
What types of drugs and treatments are available for this?
What strengths are  the upper limits and can be considered safe.?

I see the allergist on Wednesday and want to have a little knowledge about what to expect on the issue.
Thanks, and I hope to see you in about 10 days!

Current medications:
      Prednisone, 5 mg
Digestive enzymes, zenpep 10,000 units, 3 to 5 caps before each meal

Vit C, up to 10,000 mg daily
      Vit B 5, 2000 mcg daily
      Vit B 12 , 5000 mcg daily
Vit D up to 10,000 IU daily
      Lysine, 4,800 mg daily
Dindolylmethane (DIM) , 200 mg daily
      liquid Vit supplement
      fish oil 2000 IU daily

 Diet :
No fried foods, no sodas, I drink, White teas, herbals water sweetened with Stevia
95% of foods prepared at home.
     oils, fats are not hydrogenated.
95% of foods are eaten raw
     proteins are from beans, flaxseeds,

Work done in CFBH

Sort of scared straight? There are others out there that are far worse. But before I went in I was not on medications for close to two years. Now I need that medication more than anything to hold on to the job that is outside.
In therapy we covered how I am fused to the depression and how if I can see myself seperate from that disease, then the healing begins. Also we covered ANTs. Automatic Negative Thoughts, and I have ordered the book on the subject by Sally-Anne McCormick.

Would like to deal with in therapy here with Ms. Sheldon:
How to deal with this all together and not go deeper into the abyss
Many food allergies,
  • wheat,
  • milk products
  • nuts
  • peanuts
  • citrus
  • fermented food give me problems
  • plants of the mustard family, broccoli, cabbage, spinach.
  • seeds
  • tomatoes
  • garlic
  • fish
  • beef
  •  to the point that I cook all things for myself.
  •  When eating out It has to be at a place that does not use MSG in any form.
  • aspratame  can not be tolerated, only Stevia
  • sugar easily grows some kind of thick spit on the tongue-so even fruits are out, so are potatoes and yams
  • foods that are left must be eaten in a sort of rotation. Hard on me to do. Need help there.
Environmental
  • dust
  • dust mites
  • grass
  • pollen
  • possible mold
  • chemicals
  • on antidepressants '93 to 1/25/ 2110, off until 10/26/2011
Started allergy shots on 11/15/11 for the top 4 in above list, 4th is still unproven.

Testimony with updates

My Testimony
by Janet Matthews

This was originally written in August 2010 and published in YFCC's newsletter.

                                                               My Testimony August 2010
Dr. Dan is presenting his Extreme Make Over Series again. Amazingly, he is teaching all new information. The Extreme Make Overs occur about every six months. At the last EMO ( January 2010), I was just coming off my medications. At that time, I was taking 3 antidepressants, a thyroid medication, and a cholesterol medication. Now I have been off of them for six months. Over the past 17 years, I have taken, I believe, 17 or 18 different medications. Although I always desired to rid my body of these awful drugs, I couldn't go a day not taking them without severe withdrawal symptoms. These chemicals literally kept me imprisoned and were destroying my life. Over the last 6 months, I have seen incredible changes all through chiropractic care, nutritional modifications and a cutting edge detoxification program supervised by Dr. Fernandez. We must remember tho rid the body of the internal chemicals that cause harm. Sugar is a problem for me because it increases the yeast and molds in my body.
Chiropractic care brings the spinal bones back into alignment, and as a result, the brain can send those critically needed healing messages to the body.  When I first began my care, I had no curve in my neck(the arc of life).  It is supposed to have a "C" curve in it. Because it didn't, the lack of curvature was stretching the the brain stem down into the spinal column and literally pulling the brain down into the spine. OUCH! That cut off blood and information coming from the brain to the rest of my body. Because of the interference, my body suffered greatly.
Then the doctors found that I was toxic with lead along with other metals. My drinking water had to many chemicals in it as well.  Chlorine was a big problem.  Chlorine kills even the good bacteria in the intestines.  As a result, the intestines are unable to digest food correctly.  Purchasing a water filter was my first smart step and has made a big difference.
I learned how to cook with all the right foods - the ones that detoxify and reduce inflammation. I learned that garlic, onions, and cilantro are some of the most powerful healing foods that can be consumed.  Fennel also possesses incredible healing properties, one being the ability to kill mold.  Sage, rosemary, and All Spice all contribute to the production of serotonin in the brain.  This is the amino acid that lifts depression.
No strategy to heal my body worked prior to my coming to YFCC. I was poisoning myself with sugars daily. High amounts of bread, pasta, and fruits in my diet severely elevated the inflammatory process in my body and created constant suffering and pain.  My psychiatrist told me the depression would never go away. Well, of course it would never go away if I depended on him.  He wants my money.  So do the drug companies!!  Yes, let's keep the patient ignorant of the real CAUSE of their problems.  And while we're at it, let's keep their money. too!
However, the real problem is sickness and dis-ease in the body, and my depression was a symptom of the sickness.  The causes of my sickness were interference by subluxation, inflammation, yeast, molds, acidic foods, and environmental factors such as chemicals, preservatives, and additives in various foods that polluted the body.  My brain reacted to this flood of contaminants with anxiety, depression,  and allergies. I know in others the contaminants cause ADHD and a host of other brain dis-eases.
I thank God that I have my life back.  Thanks to YFCC, Dr. Dan and his entire team, my quality of life has been restored and life is enjoyable again.  Living without drugs, pain, and a dis-eased body is more than I ever dreamed possible.  I am thankful to be alive and well, and I look forward to making the rest of my years the best of my years. Thank you for my new found freedom!

New Stresses
Updates that have brought back the depression, and coming out of it again.
5/5/11
I was in a car accident May 5. I may have some whiplash.
I called Dr.Hernandez at Thrive from the accident scene. Funny that I would consider him first among everyone. But Chiro has become that much of my life
now.
When I was doing my taxes for 2010, I noticed that I had been in the
hospital in the Spring in 2009 and 2010. I was adamant that I was not
going to end up there again this year. I was almost to the point of
glee when I found myself in an ambulance yesterday afternoon. I am
here again?!  God you have a sense of humor, or maybe trying to tell
me that You are in control:)

5/11/11
As an update to the above:
Over the weekend I started to notice medium brown floaters in the
lower quarter of my vision. That would put it across my breast area.
Now with eating a lot of oils lately, I thought that it was just a
blouse that needed pretreatment  (lol), but no, it has to be the
occipital bone out of alinement again.  There has been an increase in
depression over this last weekend.
Shock to the body, misalignment of the spine is what brought it on.
5/31
I have been in and out of depression more often since the car accident.
Before the accident I would go into depression perhaps every other week. A mild depression, to be sure, but now it is getting to be daily. I thought as the body healed from the bruised and sprained back and neck, the depressions would be less. So far not. But I am hopeful that if I can get a grip on the reality of the situation, that I will get better, that I can have the happiness that I had before.
I had no target before my past improvement. I did not know what happiness could be. I had surrendered to the depression because I knew nothing else. Now I know I have been happy just last month.
I will get better.
God says that he will perfect all that concerns me. I have to keep this in the forefront as I heal.
There is more to life than depression. Most people would say duh. But when it is in your face 24/7 you get so deep into your pain that you can not see around it. Replace thoughts that are depressive with thoughts of God's love and the depression lessens.

11/20/11
I believe that the above accident has brought on severe allergic reactions that have put me out of work for nearly three weeks. I have gone back on medications, two allergy medications and two antidepressants. Check blog posts around this date.

Flax Seed Cracker Recipe

I have often been tempted to eat crackers made of wheat, but I can't take that. So after months of trying different things I found a way to make crackers. After mixing the ingredients below I spoon it on to the plastic interior linings of my food dehydrator . Spreading the mixture as thin as I can to make the drying of it as even as can be and dried as quickly as possible. The recipe can be added to as in using different spices such as caraway or sea salt sprinkled onto the surface of the mixture after it has been spread onto the plastic plates
Flax seed crackers

In Magic bullet blend:
One small tomato
Red pepper
Onion
Garlic
Sea Salt to taste
Cloves of Garlic to taste
Filtered water to fill to the top of the magic bullet container.

In a large bowl mix
one cup ground flax seeds
2 cups whole flax seeds

Pour the vegetable mixture over the flax seed mixture and stir.
The ground seeds will absorb the fluid rather quickly so work quickly in the spreading it.

Dry in food dehydrator at 135 degrees for approximately 4 hours. It varies as to the thickness of what has been spread and how many layers of the drier are being used during the drying. Some driers have many layers. Open Country has a line of driers that are inexpensive and work well. However they have no on off switch and no timer. But a timer can be added from a hardware store.

Enjoy with guacamole, or spread with olive oil and sea salt.
A sweeter version of the cracker can be made by using less veggies, more water and stevia to sweeten.

The Nutritionist is Working!

When I started this blog I knew that I did not write enough to have a following. But I wrote to document what I thought would be substantial events that would mark my way to depression free life.
I have made several discoveries since I started with the nutritionist and chiropractor.
I have lead in my system. In order to detox I am on several things. Basically a lot of green foods. Herbs such as cilantro, turmeric. I eat a lot of garlic and onions.

Occasionally. I over do it, and pull out to much lead into the system and suffer greatly for it.
Bentonite clay is a natural clay, very large surface molecules and will bind the heavy metals to itself. Then as the fluids are increased as one drinks pure water the lead is washed out of the system and the body begins to heal. When sweat is added to the mix and one sweats profusely the toxins continue to pour out. I have a sauna suit which I wear after I take a hot bath.

Heating up the body core and making oneself sweat is central to the detox. But I always hated exercise. So twenty minute baths and then crawling into the plastic suit, then under a quilt makes me sweat. The hotter the bath the redder the feet, the better the sweat. Usually it helps a lot to do this.

Heavy Metals are stored deep within muscles and bones and when pulled out with clay, or other substances they re poison the body. The effect usually takes 3 to five days to get through. This is why detox is hard. But knowing that you have pulled out poison in order to rid yourself of it, withstanding the depression is easier.

Part of my depression was that I never knew why I was depressed.
I was never told:
You may have allergens
You may have inflammation in the body
Your body pH balance is wrong.
You may have Heavy Metals in your body
You may have fungus in the body.
You may have unknown infections in your body ( dental, in colon)
Your digestion may be screwed up, not being able to digest protein
Your immune system may be messed up. Immunity would stop problems like cancer, colds and other viruses that may be in your system.
You may have pesticides that are in your system.

Pesticides are neurotoxins for bugs. They were actually created during WWII to shoot at the enemy. They called it chemical
warfare. After the war the scientist and their companies wanted to continue to sell this poisonous crap so they marketed it so that bugs would be killed through damaging the nervous system. That's fine for the bugs. Not for humans
I also have problems with this. I tried to "bomb" the kitchen for roaches. I got very sick the next three days. Stupid me. I tried to clean up the aftermath with no gloves on the hands and no footwear.Walking in it barefoot. I had done this in the past. Don't we all walk in our homes with no footwear after a bug bomb? The residue stays on the furniture and carpet, well, forever, right? Absorption city occurred. Sickness in the form of intense anxiety and some depression occurred the very next day. This lasted for about 3 days.
I have been going through all of this list above for months and although I have down turns, usually through my own ignorance, I can use my brain more rationally now than before.
